Ingredients:

  • ¾ cup rolled oats

  • cup of any nut butter of your choice (or sunflower seed butter for a nut-free option)

  • ¼ cup maple syrup or honey

  • ¼ teaspoon cinnamon (or a little more if your also love cinnamon)

  • 3 tablespoons hemp seeds (you can also swap this out for 2 tablespoons of ground flaxseeds)

  • 1 tablespoon chia seeds

  • Pinch of salt

*** This makes roughly 20 energy balls, so you can alter the measurements to fit your needs. Don't be afraid to make a large recipe and freeze balls for later. They last brilliantly in the freezer and, to be honest, they taste weirdly good cold if you don't have the patience for them to thaw!

Instructions:

  1. Line a baking sheet with parchment paper.

  2. Add all ingredients to a food processor and pulse until ingredients are coarsely ground, thoroughly combined, and stick together.

  3. Take a tablespoon of the mixture and roll in your hands to form a small sphere (you might want to spray your hands with nonstick spray to avoid the mixture sticking) and place on cookie sheet.

  4. Place cookie sheet in refrigerator for 45 minutes until they solidify a little more, and then place in an airtight container lined with parchment paper. Keep refrigerated.
